How do I pause them? I want to do specific breeding for a competitive pokemon, but can't seem to figure out how to pause the strings for breeding +  accessing  the GTL.

Yes, a season is 3 months and they are planned to start and end with the four quarters of a year. The current season will end on 31st December 00:00 UTC, followed by start of a new PvP season with stat reset.
