What do people prefer for a 5x31IV?

since you only need lvl 50 for comp, ideally lvl 50, natured, EV trained, with moveset and ability ready.

Yup, doesn't need more than level 50. Though I think if it's natured, it should also have a moveset, or at least its popular egg moves. Otherwise, unnatured and no moveset works: in which case I'd prefer level 1 no EVs. 

 

Personally I'd pick freshly hatched no EVs anyday.
